Seared Tuna and Avocado Taco Recipe by Darina Coffey

Seared tuna is always a treat and it pairs so beautifully with creamy avocado, especially in this Mexican inspired taco recipe. Chickpea flour is a hero ingredient and makes for the perfect naturally gluten-free flour to create all sorts of things, my favourite of which is these tasty tortilla wraps. Trust me, you will want to make a double batch and fry some to make your own homemade tortilla chips!

Topped with a simple guacamole and some quick pickled red onions, these seared tuna tacos are bursting with bright and zesty flavour. If the sun decides to make an appearance, you can easily adapt this recipe for a BBQ by grilling your tuna and heating the tortillas through on the barbie for a nice smokey flavour. Not into tuna? Seared steak is delicious in this recipe, why not whip up one of each?

Ingredients:

2 tuna loin steaks
1 avocado
2 limes
1 red chilli
1 red onion
Handful shredded red cabbage
Fresh coriander

Chickpea Tortillas
100g chickpea flour (gram flour)
2 tbsp milled flaxseed (or one egg)
2 tbsp water
160ml water
1/2 tsp smoked paprika
1/4 tsp ground coriander
1/2 tsp salt
oil for frying

Method:

1. Soak flaxseed in 2 tbsp water for 10 minutes.
2. Thinly slice a red onion and squeeze over the juice of a lime, allow to steep until serving.
3. In a screaming hot pan, sear your tuna steaks for 30 seconds each side, set aside to rest until serving.
4. Mash together your avocado and the juice of one lime, adding as much chopped chilli as you like
5. Whisk together chickpea flour, spices and salt, add 160ml water and the flaxseed mix and whisk to combine.
6. Heat oil in a non stick pan, pour in enough batter to coat the pan, swirl and flip once the edges begin to curl repeat until you have 6-8 tortillas.
7. To serve, spread avocado on each tortilla, top with sliced tuna, red onion, red cabbage and freshly coriander.
