Brabazon Restaurant serves dishes influenced by the delicate gardens and inspiring architecture of the house itself. Rob Krawczyk is Head Chef, and is relishing the challenge, of taking the food at Tankardstown to a whole new level. The creation of tantalising new menus for Brabazon Restaurant, both casual and Fine Dining, along with the introduction of a smoker, are just some of the exciting new changes so far. Chef’s ’Taste of Land & Sea’ Tasting Menu is becoming more and more popular with discerning diners. Rob has been crowned Best Chef in Leinster in the 2015 and 2016 RAI Restaurant Awards.
Rob’s carefully created menus change regularly reflecting the changing produce of the season, which is all sourced locally and organic where possible. The vegetables come from the walled kitchen garden at Tankardstown, whilst Rob himself enjoys engaging with Donaill Tankerstown’s gardener (Bloom Festival 2014- Bronze Medal) to grow specific produce from which he can create amazing dishes. A feast for the eye and the palate. The team are committed to producing home-grown food with clarity of flavour. The menus change frequently depending upon what the forager turns up with or what the kitchen gardener deems to be in perfect condition.
