Sometimes I actually wake up in the morning craving Pasta, no lie! It’s one of those foods that everybody loves, its fast, the possibilities are endless, its super cheap and its filling.The body needs its fuel too, this is comfort food territory! This is a favourite of mine that came about after raiding the almost empty fridge. Blue cheeses may not be to everybody’s taste, but when combined with tomato its strength is complemented perfectly with the acidity.
Ingredients
Serves 2
– 120g Spaghetti (Gluten free pasta can be used)
– 1 can of crushed tomatoes ( I love Lidl’s ‘Italiamo’ canned Tomatoes with Herbs)
– ½ medium onion (sliced)
– 3 cloves of Garlic (sliced)
– ½ a fresh red Chilli
– 1 tbsp Balsamic vinegar
– 1 tbsp Honey
– 3 tbsp Gorgonzola (more if you are a fan of the cheese)
– Handful of Basil
– 12-16 Green Olives
– Dash oil
– Salt & pepper
Method
– Cook Spaghetti to pack instructions, drain and toss in olive oil.
– Heat a dash of oil in a medium pan and add the Onions, fry for 4 minutes then add the garlic, fry for a further 2 minutes over a medium heat.
– Add the tinned tomatoes, puree, chilli, balsamic and honey and simmer for 15 minutes.
– Add the cheese, olives and basil and simmer for a further 8 minutes. Season.
– Toss in the Spaghetti and coat well.
Enjoy with a rich glass of Red wine!

I was really surprised how much this wine had going on with the nose. It has some deep dark fruits such as damsons and black cherries with leathery spicy touches giving it more layers.
Although it is uncomplicated wine it has plenty going on the palate too. The fruit and spices notes from the nose follow onto the palate awith the addition of violets and red berries.
This wine will pair so well with this yummy pasta dish. The sweet and earthy flavours coming from the dish will be beautifully balanced with the darker fruits and smooth medium body of this wine.
